Amaretti Biscuits Recipe

People have been asking me about more recipes from my auntie in Italy. Here is one for Amaretti Biscuits.


1Kg Sweet Almonds
100g of bitter almnds
1Kg of sugar
About 15 egg whites whipped until stiff
Zest of 3 Lemons.


1. Allow the almonds to dry very well and then grind them by hand (avoid electrically grinding them).

2. Mix the almonds with the sugar and slowly pour the whipped egg whites.

3. Add the lemon zest

4. Prepare the balls/biscuit shapes )grease your hands with egg whites) and roll them in sugar.

5. Arrange a baking tray lined with parchment paper and bake in a hot oven for 15 - s20 minutes at a temperature of 200 degrees.
